10 Victoria Sandwich

The first-ever Technical Challenge set for bakers in season one, the Victoria sandwich cake (sometimes called a Victoria sponge) has also appeared on another similar show to watch for GBBO fans, Junior Bake Off. As seen with Mary Berry's perfect bake, it consists of two soft sponge cakes sandwiched together with jam and sometimes the addition of cream.

Given that most classic recipes for the sponge itself only call for a few ingredients, namely eggs, self-raising flour, sugar, butter, and sometimes baking powder, it's an inexpensive and quick cake to put together. Additionally, as it's only topped with a dusting of icing sugar there's no need to fuss over decoration either.

9 Fruit Cake
